The days are getting colder but it's getting piping hot in my kitchen! Heat things up in your kitchen with these super tasty Sexie Savory Pie-lets.
Sexie Savory Pie-lets
4 small baking dishes/pie pans or a 9" pie pan for a big pie
olive oil
1 leek, chopped with leaves & bottom removed
2 large carrots, sliced
2 celery stalks, chopped
1 bunch broccoli, chopped
2 small potatoes, chopped into bite size pieces
1/2 cup diced mushrooms
1/2 cup frozen peas
1/4 cup Earth Balance*
1/4 cup flour
3 cups unsweetened almond milk
2 tablespoons fresh parsley, chopped
Salt & pepper to taste
Pie Crust:
2 cups flour
1 tsp salt
1/2 cup Earth Balance*
1/4 cup cold water
Let's start with the pie crust since that naughty little dough only likes to be handled when it's feeling cool and we can let it rest in the refrigerator while we make the pie-let filling. Grab a medium mixing bowl and let the flour and salt mingle. Then add the Earth Balance* and start getting hands-on with the dough. Slowly add the cold water in while you massage that dough. If it's too tough, loosen it up with more water. If it's too loose, reign it in with more flour. Once that dough is feeling good, let it rest in the fridge.
Preheat the oven to 375 degrees.
Now it's time to bring on the Sexie! Pull out that sleek leek, firm carrots, slippery celery, blossoming broccoli, curvy potatoes, velvety mushrooms, petite peas, and fragrant parsley. If all that Sexie is making you hot, I recommend removing some clothing and cooking in your underwear. It's the only way I can work in my Sexie Veggies kitchen.
Start by lubing up a large pan with enough olive oil to cover the bottom. Set it on medium heat to get things hot. Add the leeks, carrots, celery, broccoli, and potatoes. Stir things up and let them rub up against each other for 5 minutes. Then add the mushrooms and peas to really make things interesting. Let all of them party for another 5 minutes. Now set the heat to low so they can mellow out while we make the saucy sauce.
In a medium saucepan, over medium heat, that cold Earth Balance* will melt into something gentle. Add the flour and whisk them away into a loving frenzy. Then, while you continue the whisk, slowly add the almond milk until you get a creamy love sauce. Finally, we'll spice things up by adding the fresh parsley, salt, and pepper. Those hot Sexie Veggies are about to get saucy! Add them in and let them slip & slide over each other. Whew! If you weren't hot already, you must be by now!
Add the creamy, sexiness to the baking dishes or pie pan. Take out that cool dough and cup them into 4 balls. On a floured surface or between the sheets of some wax paper, roll out each ball to be just wider than your dish. Let it lay over the Sexie creamy Veggies, give it a little pinch on the sides (it likes that), and give it a few slits to let that Sexie steam escape. Pop your pie-lets into the toasty oven and relax in preparation for the Sexiness that awaits you. You may want to invite over a special friend or two since Sexie pie-lets are an experience that is meant to be shared.
In about 25-30 minutes your Sexie kitchen is going to smell like pie-let heaven & that crust is going to have a golden tan. Take your pie-lets out, give them about 5 minutes to collect themselves, & let the Sexie begin!
