ROCKIN' ROLLS *Makes 24 rolls (Follow along with this video: Rockin' Rolls)
4 sheets nori
2 cups cooked short brown rice
1 carrot sliced into strips
1 cucumber sliced into strips
1 avocado sliced into strips
2 tbsp rice vinegar
1 tsp turbinado sugar
Instructions: Add the rice vinegar and sugar to the cooked rice. Lay a sheet of nori on a dry cutting board with the smooth side down. Spread a thin layer of rice on the nori leaving about 1" of the edge bare. Place strips of carrot, cucumber, and avocado down the rice lengthwise so each roll will include all the Sexie. With dry hands tightly roll the nori toward the bare edge. Once you reach the edge, rub some water on it to seal the roll. Turn the roll over so the seam is on the bottom and use a clean, non-serrated knife to slice it into 8 rolls. Repeat with the other sheets of nori. Grab your favorite dipping sauce and enjoy some "roll playing."
