AYE MAMACITA CALABACITA TACOS*Serves 4 (Follow along with this video: Calabacita Tacos)
4 "spanked" garlic cloves (Spanked? Demonstration Here)
1/2 onion diced
2 calabacitas (zucchini) sliced thin
1 summer squash sliced thin
1/2 cup corn
1/2 cup salsa
olive oil
salt and pepper
Instructions: Cover the bottom of a pan with olive oil. Heat things up to medium and saute the "spanked" garlic and diced onion until the onion is translucent. Add your sliced calabacita, yellow squash, and corn to the pan. Then pour your salsa over those Sexie Veggies and put a lid on it. Let the calabacita mixture cook down until the squash is soft. (About 10 minutes.) Add salt and pepper to taste. Then invite someone special over for this food fiesta. Put the calabacita mixture inside a tortilla for tacos or top with fresh avocado and scoop it up with tortilla chips. "Que rico!"
