Hey you! I know what you're looking for. You like it fast and easy. Well I've got a beauty for you!

My local grocery store (Trader Joe's specifically) sells lavash. Lavash is a simple flatbread originally from Armenia. They make really great wraps and they also provide an easy, thin pizza crust. I'll show you what I mean:
LAVISH LAVASH PIZZA
1 lavash per person (These are personal-size pizzas)
Pizza sauce
Chopped veggies (Pictured are onions, 3 colors of bell pepper, tomatoes, & mushrooms)
*Optional Daiya Mozzarella-Style Shreds
Toast the lavash while you chop your veggies. If it's not toasted, the sauce will make the lavash soggy instead of crispy. Hey, if it's flatbread, let's make it perky flatbread!
Spread that sauce over the perky flatbread. Give it a good spread.
Then shower your lavash with the chopped veggies and, if using, sprinkle the Daiya shreds over everything.
Bake the lavish lavash in a toaster oven or regular oven at 425 degrees for 5-10 minutes or until the veggies are nice and hot. (And the Daiya has melted) Done!
If you're feeling experimental, why not play around with different Sexie Veggies or saucy sauces? Make a BBQ pizza with BBQ sauce or a Thai pizza with Thai peanut sauce or a pesto pizza with fresh vegan pesto.
I also make party sized versions of these using English Muffins instead of lavash.
Well, me and my personal-size lavash pizza are about to get more personal. Mmmm.
