Today I'm going to introduce you to a Sexie dish that's got it going on all day long. We're going to take a trip south of the border for a little Lucha Va-Vegan. This tasty dish can be enjoyed pretty much whenever you feel the urge and it's easy, which is why I like it. So vamanos!
Lucha Va-Vegan
1 package organic (Non-GMO) firm tofu
4 cloves "spanked" garlic
1/2 sweet onion diced
1 cup chopped bell peppers
1 can black beans (drained)
1/2 cup salsa
1 tbsp cumin
1 tbsp fresh cilantro
Salt & pepper
Olive oil
Get a pan all hot & bothered and then lube it up with some olive oil. Add your diced onion and "spanked" garlic and let the onion get juicy and translucent. Then add the chopped bell pepper and watch them get sweaty. Drain your tofu and give it a good squeeze to get the juices out. Then really manhandle it as you crumble the tofu over the smoldering onion, garlic, and peppers.
Next, add the black beans and get everything wet by adding salsa. Toss in the cumin and cilantro and rub all the ingredients against each other with your spatula. Let some of that moisture steam off and add salt and pepper to taste. Que rico!
Now you can experiment with your little Lucha Va-Vegan. Embrace it in a tortilla for tasty tacos and burritos. Give a bowl of Spanish rice or plate of nachos a Lucha Va-Vegan shower. Nestle it in a bowl and scoop it with tortilla chips for a snack. Or simply grab a fork and feel it's soft caress on your tongue.
