I have officially been doing this Sexie Game On Diet for a week now. I ate many delicious things last week (The Best Breakfast Sandwich - Packin' Heat Chickpea Rolls) but it's time to shake things up to keep my mouth excited! This is a slight modification of a Sexie Veggies recipe tailored specifically for the Sexie Game On Diet. I'm salivating just thinking about it.
Low-fat Lucha Va-Vegan Tacos
For the Lucha Va-Vegan filling:
1 pkg organic (non-GMO) firm tofu
4 cloves "spanked" garlic (Spanking demo here)
1/2 medium onion diced
3/4 cup chopped bell peppers, fresh or frozen
1 can black beans (drained)
1 cup corn, fresh or frozen
1/2 cup sugar-free salsa (Check the ingredients. The deli section usually has fresh salsa)
1 tbsp fresh cilantro minced
1/2 tbsp cumin
1/2 tbsp chili powder
2 tbsp veggie stock
salt & pepper
For each serving of tacos:
2 corn tortillas
1/2 tomato diced
1/4 cup shredded lettuce
*Optional: 1/4 avocado diced
Get a pan all hot & bothered and then add your diced onion, "spanked" garlic and veggie stock. Heat them up for a few minutes then add the chopped bell pepper and watch them get sweaty. Drain your tofu and give it a good squeeze to get the juices out. Then really manhandle it as you crumble the tofu over the smoldering onion, garlic, and peppers.
Next, add the black beans and corn and get everything wet by adding salsa. Toss in the cumin, chili powder, and cilantro and rub all the ingredients against each other with your spatula. Let some of that moisture steam off and add salt and pepper to taste. Que rico!
Divide 1/4 of your Lucha Va-Vegan mix into the embrace of two warm corn tortillas. Top it with your diced tomato and shredded lettuce and dive your face into this taco.
