It's almost Thanksgiving time and I am thankful we can stay Sexie even while we celebrate. Your friends and family will be very impressed when you lay your Well-Endowed Wellington on the table.
WELL-ENDOWED WELLINGTON
1 puff pastry crust (Pepperidge Farm is Sexie-approved)
3 small potatoes (I used a red, white, & purple potato) thinly sliced
1 large carrot thinly sliced
8oz package of mushrooms sliced
1 cup spinach
1/4 onion diced
3 cloves garlic minced
1/4 cup parsley minced
1 tsp thyme minced
1/2 tsp salt
olive oil
pepper
Take your puff pastry crust out of the freezer to thaw a bit while you prep the Sexie Veggies. Pre-heat your oven to 375 degrees. Set a medium pot of water on high heat to boil. While you're waiting for the water to boil heat up a medium pan with olive oil and add your diced onion. Let it get cookin for a couple minutes and then add your minced garlic to cook for another minute. Slide in your sliced mushrooms and let them cook till the mushrooms look soft and sweaty. Then add the spinach, parsley, thyme, 1/2 tsp salt, and a dash of pepper. Put a lid on it and let them heat up together till the spinach is wilted. Set it aside to cool down. When the oven is nice and hot toss your thinly sliced potatoes in a little olive oil, add a dash of salt, and bake them in the oven for 10-15 minutes. Your water should be boiling so add your thinly sliced carrots and a sprinkle of salt. Let the carrots boil for 5 minutes and then drain the water and set them aside to cool. When the potatoes have softened it's now time to assemble this Thanksgiving hunk. Spread the puff pastry dough on a lightly oiled baking sheet.
Put a layer of potatoes in the middle of the pastry sheet leaving space around the edges to fold it together.
Then add a layer of carrots on top of the potatoes.
Finally add all your onion/garlic/mushroom/spinach/herb mix on top of the carrots. Top it with another layer of carrots and another layer of potatoes. Fold the sides over the filling and press the edges together to seal it.
Then carefully flip it over so the seam is on the bottom and brush it with a little non-diary milk and olive oil. Bake it for 20 minutes or until the the puff pastry is nicely tanned. Slice it with a serrated knife and deliver your tasty Well-Endowed Wellington to eager mouths.
